We have talked about buying food daily and cooking in the kitchen. It is cheaper then eating out everyday, and usually last nights dinner is todays lunch. Getting to the grocery store everyday is totally unreasonable though, so I buy the necessities and frozen stuff and if I require one more ingredient, I go to the corner store.
I like cooking. This is new for me. My mother wasnt the best cook, and I pretty much ate homemade quesidalls througout college. Topped with avocado, and just one cheese inside. Currently, I make a wicked stir fry, but thats where my skills stop.
Mick has had some experience in the kitchen, so he is constantly teaching me things. We watch a lot of the food network now, and my newest show is Healthy Appetite with Ellie Krieger . This one particular episode I watched the other day was all about making meals in a pinch. 15 minutes or less. She made this pork with an orange juice concentrate chutney, and the inspiration for last nights dinner….a chicken mushroom quesidalla. Not the boring one I used to make. This had mushrooms, onions, cheese, chicken, the works. We also didnt have the chili powder and cumin it called for, so we improvised with BBQ sauce. Made for a great dinner, and an even better lunch. I think i should start to take pictures of my efforts, cuz her photo is pretty, mine, not so much.
So this is the plan tonight. I get a ton of emails from diet groups, SELF magazine, South Beach, etc… During my last trip to Trader Joes, I happened to buy all the ingredients…so I’m gonna try.
Chicken Breasts Stuffed With Goat Cheese and Arugula
Update: Here is a photo of the dish from last night. It was tasty!
Recipes after the break.
I weighed in for the 2nd time this week. That means that I got my initial totes offish Weight Watchers weight last week, and this week I was supposed to go and show amazing progress. In my mind anyway. I exercised, (flaked a few days), I counted points, and I left the weigh in .4 lbs less than last week. I mean…I’m not a big girl, so the weight wont just fall off of me, but..I expected more. (This post was not written so people can tell me I don’t need to lose weight. I do. Everyone has their own issues…mine is leftover Europe weight from 2002.)
I guess this means that Barry’s Bootcamp is going into full throttle mode. No more flaking. We did it this morning, but the past 3 days we lagged. I walked to work 2 of those days, but its not the same. Points will be counted to their fullest extent. If I get to 5 points left for the day by dinner…salad and veggie soup it is for me. No more monkeying around. Time to get serious.
I logged onto Yahoo today, and the headline read “Worst Foods in America”. So seeing as though i’m trying to stay somewhat healthy as of late, I decided to check it out. I think most of it was fairly obvious…but the one that shocked me was the Chipotle Burrito. 1,179 calories? Really? What is it in that burrito that bumps up the caloric count. OK..I get the cheese and sour cream…but do they lace their rice with fat? More details on the burrito after the break.
For a complete list check the original Men’s Health Article From that article, the one not listed on yahoo that made me puke in my mouth a bit, but didnt shock me was the Chili’s Awesome Blossom. Check it out..

Thats seriously sick.
The result is our first annual list of the worst foods in America.
I am a lazy ass…seriously.
I’ve joined 5-6 gyms in my day, and always say…”well, if I’m paying all this money, of course I’ll go.”
Never happens. What does happen is my spending money I don’t have, and getting nothing out of it. I try…I do. I figure the only way I’ll succeed is if I move somewhere with a gym inside my complex. It may happen. Who knows.
However, I just need to start doing what I say I’m going to do…like walking to work tomorrow, and starting to ride my bike to work more than once a month. Monday. That would be a good day to start.
I have about 10-15 lbs of cushion that I wouldn’t mind ditching. Today in the mail I got a book that I hope will help. Its for the Abs Diet. It’s that idea that you eat 6 small meals a day and boost your metabolism. With the walking and riding to work, that metabolism boost will actually be beneficial. The book I got is “6-Minute Meals for 6-Pack Abs” Yah, I know the whole 6-Pack idea is silly, but I think the idea of the diet can work with me. I’m going to read up and see what I need to buy, go grocery shopping tonight, and start eating small! On first read, just in the breakfast section alone…it looks like I need to stock up on whole wheat waffles and actual eggs…which excites me, because as much as I like eggbeaters, eggs are so much better.
Sometimes I feel like if I write about it….I have to do it. I mean…if I don’t I just look stupid right?
Do you all remember that scene in Something About Mary when Ben Stiller picks up the hitchhiker and they discuss 7-minute abs? For some reason the title of this book reminds me of that scene.
